BUTTERSCOTCH


1 1/2 cups sugar
2 cups hot water
4 tablespoons flour
1/2 cup white sugar
4 egg yolks
1 dash salt
2 cups milk
1 teaspoon vanilla
3 tablespoons butter
4 egg whites
6 tablespoons sugar
1 pinch cream of tartar

Brown 1 1/2 cups sugar in iron skillet until desired shade of brown. Letit cook down until like wax. Add hot water and cook until burnt sugar isdissolved. Mix together flour, 1/2 cup sugar, egg yolks, salt, and milk.Pour this mixture into burnt sugar mixture. Cook in double boiler untilthick. Cool. Add vanilla and butter. Pour into baked pie shells. Top withmeringue made of egg whites, sugar, and cream of tartar. Will make two smallpies or one large one.
