1 1/2 cups sugar
2 cups hot water
4 tablespoons flour
1/2 cup white sugar
4 egg yolks
1 dash salt
2 cups milk
1 teaspoon vanilla
3 tablespoons butter
4 egg whites
6 tablespoons sugar
1 pinch cream of tartar
Brown 1 1/2 cups sugar in iron skillet until desired shade of brown. Let
it cook down until like wax. Add hot water and cook until burnt sugar is
dissolved. Mix together flour, 1/2 cup sugar, egg yolks, salt, and milk.
Pour this mixture into burnt sugar mixture. Cook in double boiler until
thick. Cool. Add vanilla and butter. Pour into baked pie shells. Top with
meringue made of egg whites, sugar, and cream of tartar. Will make two small
pies or one large one.
