White Chocolate Mousse Cheesecake
Crust:
1 stick butter
1/4 cup sugar
1/2 teaspoon vanilla
1 cup flour
Filling
4 (8-oz) pkgs. cream cheese
1/2 cup sugar
1 teaspoon vanilla
4 eggs separated
1/2 cup sour craem
1/2 pint heavy whipping cream
12 0zs. white chocolate, melted and slightly cooled
Heat oven to 325 F.
Crust
Cream butter, sugar and vanilla together until fluffy.Gradually add
flour until blended. Press into bottom of 9-inch springform pan.
Prick with fork and bake 25 minutes or until edges are slightly
brown.
Filling
Beat cream chees, sugar and vanill together until blended. Add
egg yolks one at a time until blended. Add sour cream and chocolate. Whip
egg whites until soft peaks form in a separate bowl. Whip cream until soft
peaks form as well. Fold egg whites and whipped cream into the cheese mixture
until blended. Pou over crust. Bake 50 to 60 minutes or until center is
almost set.
