Here's a pecan pie recipe that's kinda involved but well worth it!!!
Ingredients:
7oz light corn syrup
3 1/2 oz sugar
1oz cornstarch
1/2 tsp. salt
3 eggs
1oz melted sweet butter
2-3oz bourbon (I use Jack Daniels)
Direction:
1. In a mixing bowl with a whip or beaters mix; sugar, corn syrup, cornstarch
and salt until pasty.
2. Add eggs 1 at a time. Mixing thoroughly and scraping sides of bowl.
3. Let butter cool slightly and add to mixture.
4. Add bourbon and mix well.
5. Coat base of half baked sugar dough shell with ganache.
6. Half fill shell with pecans and fill to top with syrup.
7. Bake at 350 Degrees F for approx. 45 minutes. (It's done when center
is set up)
Ganache: Over a double boiler heat 4oz heavy cream until hot add 4oz chopped
semi sweet chocolate and stir with spatula until smooth. Can be stored in
fridge then heated to use again.)
