3 eggs
3 egg yolks
1 cup sugar
2 tablespoons lemon peel
1/2 cup lemon juice
1/2 cup margarine, melted
1 9-inch baked pie shell
1 recipe meringue topping
Conventional Directions: Combine beaten eggs and yolks, sugar, lemon peel
and juice in top of a double boiler. Place over boiling water. Add margarine
and cook, stirring constantly, until margarine is melted and and sauce has
thickened. Prepare meringue topping and bake as directed.
Microwave Oven Directions: In a glass mixing bowl beat eggs and egg yolks
until thick and lemon colored. Add sugar, lemon peel and lemon juice, and
beat until mixture is smooth. Add melted margarine.
Place lemon mixture in microwave oven and cook on high setting for 4 minutes,
or until mixture is thick and bubbly, stirring each minute. Pour into baked
pie shell and chill thoroughly. Prepare Meringue Topping and spread over
filling, bringing it well out onto the edge of the crust, completely covering
filling. Bake at 325°F for 12 to 15 minutes, or until browned.
Yields one 9 inch pie.
