POTATO STUFFING


4 medium potatoes
1 onion
2 carrots
2 eggs
1/2 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup melted margarine

Food Processor Directions: Wash potatoes and cut into chunks (it is not necessary to peel the potatoes). Insert shredding disc in food processor. Use the pusher to guide potato chunks through the feed tube to the cutting disc. As container becomes full, empty contents into a large mixing bowl, then continue processing. Squeeze shredded potatoes to remove excess liquid. Insert steel blade in food processor. Peel onion and cut in chunks, then place in the container. Cut the carrot into chunks and place in container. Process until vegetables are finely chopped and add to potatoes. Beat the eggs and add to vegetable mixture along with remaining ingredients.

Yields 5 cups.
