FETTUCINE ALFREDO WITH CHICKEN


1/4 cup (60 mL) butter
1 tsp (5 mL) flour
12 oz (385 mL) evaporated milk
3/4 cup 150 mL) grated Parmesan cheese
1 tsp (5 mL) chopped parsley
1 1/2 cups (375 mL) cooked chicken, julienned 1/2 cup (125 mL) bacon, cooked,crumbled
freshly ground pepper
4 cups ( 1 L) cooked fettucine

· In a skillet, melt butter, add flour and cook for a few minutes.Pour milk into mixture in thin stream and stir with wire whisk. Add cheeseand parsley. and fold in cooked chicken and crumbled bacon. Season withground pepper. Cook for a few minutes to desired thickness. Add fettucineand serve.

Yield: 4 servings
