MARSALA TOMATO SAUCE


4 cups plum tomatoes
2 tablespoons butter
2 chopped onions
1 chopped garlic clove
4 slices bacon
l/2 cup Marsala
1/2 teaspoon dried oregano

Blanch tomatoes. Cook and crumble bacon. Put tomatoes through a food mill. In a large skillet, melt butter, and cook onion until it is soft. Add garlic, tomato puree, and crumbled bacon. Add salt and freshly ground pepper to taste. Boil for 4 minutes. Add Marsala and oregano, and cook for another 4 minutes. Serve immediately.
