MEAT SAUCE FOR SPAGHETTI


1 pound ground beef
4 cloves garlic
1 large onion
1 large green pepper
1 teaspoon oregano
2 cans tomato paste
1 can tomato sauce
3 sprigs parsley
4 pieces celery
salt, pepper, bay leaves, onion salt, garlic salt, celery salt, or rosemaryto taste

Fry hamburger in bit of fat, until slightly brown. Grind or chop onion,garlic, green peppers, parsley and celery. Add to fried hamburger and simmerfew minutes. Put ingredients in large pot, add tomato paste, tomato sauceand water to just cover the top of ingredients. If too thick can be thinnedwith additional water while cooking. Add spices and cook over low heat 4hours. Any of the spices may be omitted except the oregano. If cooking inpressure cooker cook 15 minutes at 15 lbs pressure, then cook uncoveredover low heat for about half hour or until dark fat comes to surface. Serveseparately with spaghetti cooked 20 minutes, drained, and mixed with largepiece of butter to prevent sticking. This makes an excellent meal servedwith tossed green salad and garlic bread.
