1 pound ground beef
4 cloves garlic
1 large onion
1 large green pepper
1 teaspoon oregano
2 cans tomato paste
1 can tomato sauce
3 sprigs parsley
4 pieces celery
salt, pepper, bay leaves, onion salt, garlic salt, celery salt, or rosemary
to taste
Fry hamburger in bit of fat, until slightly brown. Grind or chop onion,
garlic, green peppers, parsley and celery. Add to fried hamburger and simmer
few minutes. Put ingredients in large pot, add tomato paste, tomato sauce
and water to just cover the top of ingredients. If too thick can be thinned
with additional water while cooking. Add spices and cook over low heat 4
hours. Any of the spices may be omitted except the oregano. If cooking in
pressure cooker cook 15 minutes at 15 lbs pressure, then cook uncovered
over low heat for about half hour or until dark fat comes to surface. Serve
separately with spaghetti cooked 20 minutes, drained, and mixed with large
piece of butter to prevent sticking. This makes an excellent meal served
with tossed green salad and garlic bread.
