POTATO GNOCCHI


5 potatoes
1/4 teaspoon salt
1/4 teaspoon grated nutmeg
2 egg yolks
1/2 cup grated Parmesan
l l/2 cups flour

Bake potatoes in a preheated 350 degree oven for 1 hour. Skin and mash them. Put into a large bowl. In another bowl, mix yolks, salt, nutmeg, and cheese; mix well. Combine with potatoes. Add flour gradually, until a dough forms and holds together. The dough should be soft but firm enough to roll. On a floured board, roll small amounts of dough into small cylinders; cut each cylinder into l/2 inch pieces. Take each piece, and press it against a cheese grater. Drop gnocchi gently into 4 quarts boiling salted water, and cook for 5 minutes. Drain, and top with sauce.
