3 1/2 pound broiler chicken, cut up into frying-size pieces
1/4 cup oil
1 large onion, cut up
1 large clove garlic, diced
1 pound tomato purée
10 ounces plum tomatoes
2 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon oregano
1/2 cup white wine
1/4 pound sliced mushrooms
Heat oil and brown chicken. Add onion; continue browning. Add garlic, tomato
purée and plum tomatoes, salt, pepper, and oregano. Simmer for 45
minutes. Add wine and mushrooms and cook for 15 minutes longer.
