DUCK IN WINE SAUCE
One 5 pound duck
2 tablespoons margarine
2 tablespoons minced onion
1 garlic clove, minced
1/2 teaspoon crushed tarragon
2 tablespoons flour
2 cups dry red wine
Crock Pot Directions: With a fork, prick the skin of the duck all over at
about 2-inch intervals. Place duck, breast side up, on a rack in crock pot.
In a saucepan, melt margarine and sauté onion, garlic, and tarragon.
Add flour, stirring to form a paste. Gradually add wine, stirring constantly.
Cook over medium heat until sauce is thickened. Brush half of sauce mixture
over duck. Cover crock pot and cook on low setting for 7 to 9 hours. Drain
off fat from sauce before serving.
