ORANGE GLAZED DUCK



One 5 pound duck
2 oranges, quartered
1/2 cup orange marmalade
2 tablespoons dry white wine
1 tablespoon soy sauce

Microwave Oven Directions: Sprinkle cavity of duck with salt. Fill cavitywith orange quarters and close opening with toothpicks. Tie legs togetherand tie wings to the body with string. Place duck, breast side down, ona plastic or microwave oven-proof rack which fits inside a glass bakingdish. Combine marmalade, wine, and soy sauce and brush one-third of themixture over duck. Cook on high for 15 minutes. Drain fat from dish or removefat with a baster. Turn duck breast side up and brush with marmalade mixture.Cook on high setting for 20 minutes longer, or until duck is tender. Transferduck to a serving platter and cover with foil. Skim fat from pan drippings.Combine pan drippings with remaining marmalade mixture and serve as a saucewith the duck.

Conventional Directions: Prepare duck for cooking as in basic recipe. Placeon a rack in an open roasting pan and cook at 450°F for 1 to 1 1/2 hours,or until duck is tender. Baste frequently with marmalade mixture. Skim fatfrom sauce and serve with duck.
