ORANGE GLAZED DUCK
One 5 pound duck
2 oranges, quartered
1/2 cup orange marmalade
2 tablespoons dry white wine
1 tablespoon soy sauce
Microwave Oven Directions: Sprinkle cavity of duck with salt. Fill cavity
with orange quarters and close opening with toothpicks. Tie legs together
and tie wings to the body with string. Place duck, breast side down, on
a plastic or microwave oven-proof rack which fits inside a glass baking
dish. Combine marmalade, wine, and soy sauce and brush one-third of the
mixture over duck. Cook on high for 15 minutes. Drain fat from dish or remove
fat with a baster. Turn duck breast side up and brush with marmalade mixture.
Cook on high setting for 20 minutes longer, or until duck is tender. Transfer
duck to a serving platter and cover with foil. Skim fat from pan drippings.
Combine pan drippings with remaining marmalade mixture and serve as a sauce
with the duck.
Conventional Directions: Prepare duck for cooking as in basic recipe. Place
on a rack in an open roasting pan and cook at 450°F for 1 to 1 1/2 hours,
or until duck is tender. Baste frequently with marmalade mixture. Skim fat
from sauce and serve with duck.
