PHILIPPINE CHICKEN
One 3 pound chicken, disjointed
1/2 teaspoon peppercorns
1/4 cup vinegar
2 teaspoons salt
1 teaspoon sugar
1 tablespoon soy sauce
1 bay leaf
2 medium sized garlic cloves, chopped
Simmer chicken in the above ingredients in a covered pan for 2 1/2 hours
at low temperature. Pour off the broth to be served later over rice. Brown
chicken quickly in a hot oven or on top of stove. Serve with rice, the chicken
broth, steamed spinach, or swiss chard with chopped hot crisp bacon and
Spanish rolls.
