COLE SLAW
3 heads cabbage
1 pound carrots
3 stalks celery
1 onion
1 green pepper
2 tablespoons minced parsley
2 cups mayonnaise
2 tablespoons lemon juice
salt and pepper to taste
Cut cabbage into chunks and core. Peel carrots and cut into chunks. Insert
shredding disc in food processor. Guide chunks of cabbage and carrots through
feed tube to shred fine. As container becomes full transfer contents to
a large mixing bowl. To cut cabbage into longer pieces, use the slicing
disc. Cut celery into chunks. Insert slicing disc and guide celery through
feed tube to slice fine. Add to cabbage mixture. Peel onion and cut into
eighths. Remove seeds from green pepper and cut into pieces. Insert steel
blade in food processor. Process the onion and green pepper until finely
chopped. Add to cabbage along with remaining ingredients and mix well.
Chill before serving.
