GOURMET CHICKEN SALAD
1/2 cup French Dressing
2 tablespoons sliced black olives
1/2 cup slivered almonds
2 cups diced cooked chicken
1 celery stalk
2 eggs, hard-boiled
salt and pepper to taste
1/4 cup mayonnaise
Marinate chicken in French Dressing for several hours. Combine with chopped
celery and eggs. Add black olives (slice in food processor using slicing
disc) and almonds.
Food Processor Directions: Best results are obtained if the chicken is
diced by hand; however, the food processor may be used if desired. Insert
steel blade in food processor. Place chunks of chicken in container and
coarsely chop, using pulse button or quick on-off motion. If chicken is
overprocessed it will form a paté (which is also delicious). Place
diced chicken in mixing bowl. Insert steel blade in food processor. Cut
celery into large chunks and place in container. Process until coarsely
chopped. Add to diced chicken in mixing bowl. Peel eggs and cut into quarters.
Place eggs in container and process until finely chopped. Combine with
chicken mixture. Season to taste and add mayonnaise until salad reaches
desired consistency.
