RAINBOW RED CABBAGE
1 medium head red cabbage
1 pound carrots
1 bunch red radishes
1/2 small red Bermuda onion
1 stalk celery
1 cucumber
Dressing:
3/4 cup salad oil
1/4 cup vinegar
1 tablespoon minced onion
1 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon sugar
Food Processor Directions: Cut cabbage into wedges and remove core. Peel
carrots and cut into chunks. Insert shredding disc in food processor.
Guide cabbage and carrots through feed tube to shred, emptying container
into mixing bowl as it becomes full. Trim radishes. Cut onion and celery
into chunks. Slice cucumber lengthwise and remove seeds, then cut into
chunks. Insert slicing disc in food processor. Guide vegetables through
feed tube to slice fine. Combine with cabbage mixture. Insert plastic
disc in food processor. Combine all ingredients in container and process
until blended. Pour dressing over vegetables and toss together.
