CHEESE SAUCE


1 cup grated yellow cheese
1/2 teaspoon worcestershire sauce
1 dash paprika
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 cup milk

Microwave Oven Directions: Put butter in glass dish and cook on high setting until melted (about 30 seconds). Add flour and salt, stirring until smooth. Cook on high setting for 30 seconds, until very hot. Add milk, stirring constantly until smooth. Cook on high setting for 4 minutes, stirring once every minute, until sauce is thick and bubbly.

Conventional Directions: In a small saucepan, melt butter over medium heat. Stir in flour and salt. Cook until mixture bubbles, stirring constantly, but do not allow to brown. Remove from heat. Add milk and stir until smooth. Return to heat and cook until mixture thickens, stirring constantly.

Stir cheese, worcestershire sauce, and paprika into prepared white sauce. Return sauce to microwave oven and cook on high setting until cheese is melted (about 1 minute). Serve with eggs, macaroni, rice, fish or vegetables.
