1/4 cup brandy
1 (16 ounce) can cherries, packed in water
3 tablespoons cornstarch
1/2 cup sugar
1/4 teaspoon salt
1/2 cup water
1/4 tsp red food coloring
Microwave Oven Directions: Drain liquid from cherries into a glass mixing
bowl. Combine with cornstarch to make a smooth paste. Add sugar, salt, water
and-if desired-red food coloring. Place in microwave oven and cook on high
setting for 3 minutes, or until mixture thickens, stirring once. Add cherries
and 2 tablespoons brandy. Return to microwave oven and cook on high for
1 minute longer, or until cherries are warm. When ready to serve, warm remaining
brandy in a large spoon or ladle over a candle or flame. Ignite and pour
flaming liquid over cherries. Serve at once, alone or over ice cream.
Conventional Directions: In top of a double boiler combine ingredients as
described in basic recipe. Cook over boiling water, stirring constantly,
until sauce thickens. Add cherries and 2 tablespoons brandy, and cook until
they are warm. When ready to serve, warm remaining brandy in a large spoon
or ladle over a candle or flame. Ignite and pour flaming liquid over cherries.
Serve at once, alone or over ice cream.
