FRESH TOMATO SAUCE


2 large tomatoes
3 garlic cloves, minced
1/3 cup fresh parsley, minced
2 tablespoons lemon juice
1/2 teaspoon marjoram
salt and pepper to taste
1/4 cup hot water

Peel tomatoes by dipping in boiling water for 15 seconds or by pouring boilingwater over top of them. If peel does not slip off easily, repeat procedure.

Microwave Oven Directions: Chop peeled tomatoes fine and place in a glassmixing bowl. Add remaining ingredients, blending well. Cover bowl with plasticwrap and cook on high for 3 minutes, or until mixture boils. Reduce settingto medium and continue cooking for 12 minutes longer. Stir well and adjustseasonings. Use as a sauce for baked fish.

Conventional Directions: Chop peeled tomatoes and place in a saucepan withthe remaining ingredients. Bring to a boil, reduce heat, and simmer gentlyfor 30 minutes. Taste to adjust seasonings. Yields 1 1/2 cups
