Tomato Basil SAuce
1/4 cup good olive oil
1 medium onion,chopped
2 cloves garlic, minced
1 cup diced carrots
1/2 cup diced celery
1/2 cup diced green pepper
1/2 cup diced red bell pepper
21/2 pds of ripe tomatoes,peeled,seeded and chopped or 2(28-ounce) cans
of tomatoes, undrained,chopped
1/4 cup fresh basil or 11/2 Tbsp dried basil
1/2 tsp dried oregano
1/2 tsp parsley
1/2 tsp sugar
Salt and pepper to taste
Heat oil in a large,heavy skillet over medium heat. Add onion and saute
until soft and transparent,about 10 min. Add garlic and saute' a minute
or two,then stir in tomatoes and herbs. Raise heat and bring to a boil.
Cook about 2 to 3 hours longer if desired. You can add browned ground beef
to this if you like meat or brown Italian sausage and put this in.
