ETOUFEEE


E'TOUFFE'E

4 large onions,chopped
4 medium-size green peppers,chopped
4 cloves garlic,minced
2 stalks celery,chopped
1 cup butter or margrine
2 TBSP all-purpose flour
4 pds of crawfish tails,peeled
2 cups hot water
2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper
1/4 cup green onion tops,chopped
1/4 cup chopped fresh parsley
Hot cooked rice
Saute' onion,green pepper,garlic and celery in butter in a large Dutch oven over low heat 30 minutes. Stir in flour. Add crawfish,water,salt and pepper. Cover and simmer 10 minutes or until crawfish are tender. Stir in onion and parsley and serve over rice. Yield:8-10 servings
