BLENDER BORSCHT


1 (16 ounce) can beets
4 cups water
3 tablespoons vinegar
1 carrot, thinly sliced
1 teaspoon dill weed
2 teaspoons instant soup mix, beef-flavored
1 teaspoon salt
1 1/4 cups sour cream

Blender Directions: In a large pot, combine all ingredients except sourcream. Bring to a boil, reduce heat, and simmer, covered, for 30 minutes. Remove from heat and allow to cool slightly. Pour soup mixture into blendergoblet (in 2" or 3" loads) and blend until smooth. Transfer toa refrigerator container and chill. When ready to serve, place soup inblender with 3 heaping Tbsp of sour cream for each cup of soup. Blend onlow speed until mixture is smooth and light pink in color. Serve in chilledmug or soup bowl. Garnish with a spoonful of sour cream.
