1 (16 ounce) can beets
4 cups water
3 tablespoons vinegar
1 carrot, thinly sliced
1 teaspoon dill weed
2 teaspoons instant soup mix, beef-flavored
1 teaspoon salt
1 1/4 cups sour cream
Blender Directions: In a large pot, combine all ingredients except sour
cream. Bring to a boil, reduce heat, and simmer, covered, for 30 minutes.
Remove from heat and allow to cool slightly. Pour soup mixture into blender
goblet (in 2" or 3" loads) and blend until smooth. Transfer to
a refrigerator container and chill. When ready to serve, place soup in
blender with 3 heaping Tbsp of sour cream for each cup of soup. Blend on
low speed until mixture is smooth and light pink in color. Serve in chilled
mug or soup bowl. Garnish with a spoonful of sour cream.
