Crawfish Bisque
4 tablespoons olive oil
3 pounds live crawfish, remove tails
and save shells
1 teaspoon paprika
1/8 teaspoon red pepper
1/2 gallon water
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 tablespoon tomato paste
3 cups heavy cream
1/2 cup chopped tomato
4 tablespoons brandy
Heat olive oil in a large saucepan. Saut crawfish
shells, paprika, and red pepper for 5 minutes in olive
oil. Add water and bring to boil.
Simmer for 30 minutes. Strain liquid into another pan
and crush the shells to remove all the juice.
Return to heat and add onion, green pepper, tomato
paste, cream and tomato.
Stir frequently and simmer for 1 hour. Add brandy
and crawfish tails and simmer for 10 minutes.
Serve hot. Makes 8 servings.
