CREAM OF ASPARAGUS SOUP


2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
3 cups milk
1 (10 ounce) package frozen asparagus

Cook 1 package of frozen asparagus according to package directions. Drainasparagus, saving cooking liquid to use in preparing white sauce as a substitutefor an equal amount of milk.

Blender Directions: Prepare a white sauce by melting butter in a smallsaucepan over medium heat. Add flour and 1/2 tsp salt, blending well. Slowly add 1 cup milk, stirring constantly. Cook until mixture boils andthickens. Set aside. Place cooked vegetables and remaining milk in blendergoblet. Blend at medium speed until smooth. Pour into a saucepan, addsalt, and heat until just below boiling. Stir prepared white sauce intosoup mixture, blending well. Taste to correct seasoning.
