CREAM OF BROCCOLI SOUP


2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
3 cups milk
1/2 pound broccoli

Cook the thick stems from the broccoli for soup and reserve the broccoliflowerets for another recipe.

Blender Directions: Prepare a white sauce by melting butter in a smallsaucepan over medium heat. Add flour and 1/2 teaspoon salt, blending well. Slowly add 1 cup milk, stirring constantly. Cook until mixture boils andthickens. Set aside. Place cooked vegetables and remaining milk in blendergoblet. Blend at medium speed until smooth. Pour into saucepan, add salt,and heat until just below boiling. Stir prepared white sauce into soupmixture, blending well. Taste to correct seasoning.
