CREAM OF CAULIFLOWER SOUP


2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
3 cups milk
1/2 head cauliflower

Cook cauliflower until tender.

Blender Directions: Prepare a white sauce by melting butter in a small saucepan over medium heat. Add flour and 1/2 teaspoon salt, blending well. Slowly add 1 cup milk, stirring constantly. Cook until mixture boils and thickens. Set aside. Place cooked vegetables and remaining milk in blender goblet. Blend at medium speed until smooth. Pour into saucepan, add salt, and heat until just below boiling. Stir prepared white sauce into soup mixture, blending well. Taste to correct seasoning.
