CREAM OF CELERY SOUP


3 stalks celery
3 cups milk
1 slice onion
1 teaspoon salt
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon pepper
1 cup cream

Break celery in 1-inch pieces. Cook in double boiler with onion and milk, 20 minutes. Remove onion and celery, heat the butter, and flour and seasonings (at first just 2/3 cup, then gradually the rest of the celery broth). Add cream and celery, cook until smooth and slightly thickened.
