1 pound beets
Microwave Oven Directions: Weigh beets on a kitchen scale. Place in glass
dish and cover with plastic wrap. Cook beets for 7 minutes per pound. After
cooking, the beets may be easily peeled, then sliced, quartered, chopped
or cut into julienne strips for serving. Serve hot or cold.
Conventional Directions: Cut tops from beets, leaving short stems. Wash
well. Place beets in a saucepan with 1 inch of boiling salted water. Cover
pot and cook until beets are tender, about 1 hour. When beets are done,
cool slightly and slip off the skins. Serve as in basic recipe.
