BROCCOLI


1 pound broccoli

Microwave Oven Directions: Wash broccoli well and weigh on kitchen scale. Cut slashes in bottom of stalks. Wrap in plastic wrap and place on paper plate (or arrange broccoli in glass serving dish and cover with plastic wrap). Cook on high setting for 7 minutes per pound. After cooking, the tough part of the stem may be used in a purée, or diced and used in a salad. Season to taste. Serve broccoli hot or cold.

Conventional Directions: Trim broccoli by removing large leaves and tough part of stalk. Cut slashes in bottom of stalk. Place broccoli in a saucepan with 1 inch boiling salted water. Cook, covered, until barely tender (about 10 to 12 minutes). Broccoli tastes best when steamed to the tender-crisp stage. Drain and serve.
