6 sweet potatoes, cooked
salt and pepper to taste
4 tablespoons margarine
1/3 cup brown sugar
2 tablespoons orange juice
1 tablespoon grated orange peel
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
Microwave Oven Directions: Peel and slice potatoes. Arrange slices in a
glass baking dish. Sprinkle with salt and pepper. Set aside. Place margarine
and brown sugar in a small glass bowl. Place in microwave and cook on high
1 minute, or until melted. Stir in remaining ingredients, blending well.
Pour sugar mixture over potatoes. Cover dish with plastic wrap. Place in
microwave oven and cook on high setting 3 minutes. Reduce setting to medium
and cook 12 minutes longer.
Crock Pot Directions: Peel and slice potatoes and arrange slices in crock
pot. Melt margarine. Combine with remaining ingredients and pour over top.
Cover and cook on high setting for 30 to 45 minutes.
Conventional Directions: Peel and slice potatoes and arrange in a greased
baking dish. Melt margarine and combine with remaining ingredients. Pour
over top of potatoes. Bake at 375°F for 20 minutes.
