CUCUMBER AND ONION MARINADE


2 cucumbers
1 Bermuda onion
1/2 cup cider vinegar
1/2 cup water
1/4 teaspoon pepper
1 tablespoon sugar
1 teaspoon salt
2 tablespoons minced parsley

Peel cucumbers and thinly slice. Peel and slice medium sized onion. Put cucumber and onion in bowl or dish, and pour over sauce made of rest of ingredients. (Cucumbers are more crisp with saccharine.) Put 4 or 5 ice cubes in bowl, cover, and set in refrigerator 5 to 6 hours before serving.
