1 pound raw potatoes, peeled and grated
1 small onion, grated
1 egg
3 tablespoons flour
1 teaspoon salt
pepper to taste
1/4 cup salad oil for frying
Into grated potatoes and onion add beaten egg, flour, salt and pepper. Note:
Add grated onions quickly to potatoes to prevent discoloration. Heat oil
about 1/2-inch deep, in frying pan. Spoon potato mixture in hot oil to form
2-inch pancakes. Brown on both sides until crisp. Drain on absorbent paper.
Yields about 12 latkes. Serve with apple sauce or sour cream on side.
