1 pound spinach
Microwave Oven Directions: Trim and wash spinach leaves. Put into a glass
bowl, cover top of bowl with plastic wrap and place in microwave oven. Cook
on high setting for 4 minutes per pound. Other greens, such as beet greens,
collards and kale, are cooked in the same manner and for the same length
of time. Cook mustard greens and Swiss chard for 5 minutes per pound.
Conventional Directions: Wash and trim spinach or other greens. Shake off
excess water, but do not dry. Place in a saucepan with 1 Tbsp margarine.
Cook over high heat until steam appears. Reduce heat, cover and simmer for
5 to 6 minutes, or until tender.
