TURNIP CAKES


4 turnips, cut in small pieces
2 eggs, separated
2 tablespoons flour
1 dash salt
1/4 teaspoon diced onion

Cook turnips with salt, in very little water, until done (about 20 minutes). Beat the white of eggs until stiff, fold in the beaten egg yolks. Add turnips, flour, and onion. Mix well. Drop from tablespoon into deep hot fat. Fry until brown.
