VEGETABLE CUSTARD


1 small onion
2 cups cooked vegetables
4 eggs
1/2 teaspoon salt
1/2 teaspoon paprika
1 1/2 cups milk
2 ounces shredded cheese

Food Processor Directions (for preparing custard): Insert steel blade in food processor. Peel onion and cut into chunks. Place in container and process until finely chopped. Place well-drained vegetable pieces in container and process, along with onion, until mixture is finely chopped. Add eggs, salt and paprika, and process until smooth. Combine mixture with hot liquid and cheese. Pour into a well-greased large mold or into 6 small individual molds. Bake at 350°F (180 degrees C) for 45 minutes for large mold and 30 minutes for individual ones. Custard is done when knife inserted near center comes out clean.

Microwave Oven Directions (for cooking custard): Place in microwave oven and cook on medium setting 10 minutes.
