Daikon (low bok) is a large white radish that is shaped like, but is
at least twice as thick as, a large carrot. Despite its size it is crisp
and juicy and has a nice, not too strong peppery flavor. It can be used
either raw or cooked. Pickled daikon is highly prized in Japan, where no
rice dish is ever served without it. In tonnage the daikon is Japan's number
one vegetable crop.
