Fresh ginger root is an indispensable flavoring ingredient in a host of Oriental recipes. The flavor of fresh ginger is far superior to the ground ginger powder that you find on the supermarket spice rack. It looks somewhat like an elongated, very gnarled, thin-skinned new white potato. Fresh ginger root is in the market year-round. We import it from as far away as the Fiji Islands, but the finest fresh ginger is grown in Hawaii. It has a fairly long shelf life and a small amount goes a long way. It lasts for weeks if refrigerated, but if you slice ginger root and store it in sherry wine or rice vinegar, it will last for months.
