Horseradish, unlike ginger, is a true root. Look for firm horseradish without soft spots or sprouts. To store, wrap in a damp paper towel, place in a plastic bag, and refrigerate. To use, scub and peel horseradish, then grate it directly onto any food that benefits from its zip. Or make a "prepared" horseradish with white wine vinegar, salt and sugar (graded turnip may be added to lighted the heat).
