Bibb lettuce, also called limestone lettuce, has a very small head thathas dark green leaves and a soft texture. It is often grown under glass,but does equally well when grown outdoors. This is a highly prized varietythat frequently appears on menus of more elite restaurants. It is delicate,sweet, and tender, and has more flavor than most other head lettuces. Bibblettuce is usually fairly costly in price.
