Leaf lettuce, which doesn't form a compact head, is also known as salad bowl lettuce. For years it has been a favorite of home gardeners, but only recently has it been grown commercially on a large scale. Leaf lettuce has been very well received at the produce stands and by the restaurant trade. It has a mild flavor and a fairly crisp texture. There are several varieties of leaf lettuce. It is usually green, but a reddish variety is rapidly gaining favor. Leaf lettuce is highly prized in Latin American neighborhoods, where it is called lechuga. It usually sells at moderate prices at all produce stands.
