Romaine lettuce, also known as cos lettuce, dates back to the Roman Empire. Unlike the other head lettuces, which are round, the romaine has a long, narrow leaf. This is a very crisp, sweet-flavored variety. The outer leaves are slightly coarse and dark green in color, but romaine has a golden heart. This is the variety used to make a Caesar salad. It usually sells at moderate prices.
